El Silencio is a distinctive natural coffee from Robinson Rivera’s farm in Piendamó, Cauca. Robinson has been growing coffee for more than 20 years and is a member of ACC, an association of coffee growers focused on improving quality and creating better opportunities for producers across the region.
What does this coffee taste like?
Expect ripe plum alongside cacao and tamarind, with very subtle notes of nutmeg. It has a rich, sweet body with plenty of fruit and a long finish. The natural processing and controlled fermentation bring extra sweetness, depth and complexity to the cup.

About the coffee
El Silencio comes from Robinson Rivera’s 8-hectare farm in the Once de Noviembre area of Piendamó, Cauca. Robinson is part of ACC, the Asociación de Caficultores del Centro del Cauca por la Paz, an organisation established to improve coffee quality and help growers create greater value from their coffee.
The cherries for this lot are picked very ripe and floated to remove defects before being placed in a mechanical silo for around 48 hours. They then undergo a 24-hour fermentation before returning to the silo for further drying. The coffee is finally dried in a parabolic dryer to reach its final moisture level.
The result is a naturally processed Colombian coffee with a nice fruit character, balanced sweetness and plenty of depth. A great example of what can happen when careful farming and more experimental processing come together.
