The Wild Ones Coffee Collection 

There’s a new wave of coffee and it doesn’t always taste like what people expect coffee to taste like.

We’ve called this collection *The Wild Ones*  for a reason. These coffees are not traditional. They are not clean, classic, or typical. They are the result of producers experimenting at origin, pushing boundaries, and exploring what coffee can become.

What do we mean by “Experimental”?

Experimental coffees refer to lots where the producer has intentionally changed or developed the processing method to influence flavour.

This can include:

  • Thermal processing (such as thermal shock or controlled heat application)
  • Extended or multi-stage washing techniques
  • Co-fermentation with fruits or other natural ingredients
  • Yeast inoculation to guide fermentation
  • Infused or other controlled fermentation approaches designed to highlight specific characteristics

Each of these methods can dramatically alter how a coffee tastes. Sometimes the impact is subtle. Sometimes it’s intense.

Why do these coffees taste so different?

Traditionally, coffee flavour has been closely tied to origin, variety, and altitude. With experimental processing, flavour is often driven more by what happens after harvest.

This means you will experience notes that feel wild and surprising. Some coffees can show bright, sparkling acidity. Others might lean into more unusual flavour profiles that don’t immediately resemble what we think of as “classic coffee.”

For some people, that’s exciting. For others, it can feel a step too far.

Not for everyone......  and that’s okay

These coffees can be polarising.

Some people love the intensity and uniqueness. Others prefer the clarity and structure of more traditional washed coffees. Neither is right or wrong. It simply comes down to personal preference.

We believe there is still something incredibly special about a beautifully executed classic coffee. Experimental lots are not here to replace that. They are here to sit alongside it, offering a different kind of experience.

A note on transparency

As processing methods evolve, so does the conversation around transparency.

We believe it’s important that producers share as much detail as possible about how coffees are processed, and we actively encourage this in our sourcing. Where possible, we seek clarity around fermentation techniques, inputs, and methodology.

However, this is an evolving space. Techniques are developing quickly, and in some cases producers choose to protect their methods.

We will always aim to communicate as clearly and honestly as we can with the information available to us.

Why we created The Wild Ones

This collection exists to showcase coffees that challenge expectations.

They are expressive, sometimes unpredictable, and often conversation-starting. They represent a side of coffee that is still being defined.

Not every cup will be for everyone. But every cup is part of a bigger exploration of what coffee can be.
