Indonesia Team Pegasing CM comes from the Pegasing region of Sumatra, where Hendra and his family run a specialty farm and washing station. Unlike much of the surrounding area, which uses conventional wet-hulled processing, Hendra has focused on experimenting with washed and carbonic maceration methods to highlight the unique characteristics of the coffee.

What does this coffee taste like?

Expect, juicy strawberry and peach notes up front, layered with subtle blueberry sweetness. The cup is lively and expressive, with a smooth body that balances the intense fruit flavours from the carbonic maceration process. This coffee is rich, complex, and vibrant, offering a unique flavour experience.

About the coffee

Hendra’s farm and washing station are islands of specialty coffee in a sea of conventional wet-hulled production. He works with 70 local farmers, incentivising careful cherry picking with premiums for quality and extra payment for distance travelled.

Once selected, ripe cherries are placed in plastic fermentation tanks with CO₂ to remove oxygen and fermented for 70–80 hours. The coffee is then dried on raised beds in drying tents for 20–25 days, with careful temperature monitoring and regular turning. Hendra also grows the Abyssinia varietal and works with local farmers to plant it on small plots, paying more for the higher cup quality despite the lower yield.
