This coffee comes from Bette Buna's own farm in Guji, Ethiopia. Produced using their unique Kickstart process, it builds on the classic sweetness of a natural Ethiopian coffee while adding extra body and depth to the cup.

The result is a coffee that feels familiar, yet just a little more indulgent.

What does this coffee taste like?

Expect ripe berry sweetness with soft redcurrant fruit, delicate florals and a smooth, syrupy body. The cup is sweet, creamy apricot, while the Kickstart process adds extra richness without taking away the clean, classic character that makes Ethiopian naturals so special.

About the coffee

This lot comes from Bette Buna's own farm in Guji, where cherries are picked at peak ripeness before being taken to the wet mill. Before traditional natural drying begins, the cherries spend a short period in an oxygen free environment. This is known as the Kickstart process.

Unlike a full anaerobic fermentation, this stage is deliberately brief. It gently changes the structure of the sugars within the fruit before drying, creating a coffee with greater sweetness, a fuller body and more intensity, while preserving the classic profile of a natural Ethiopian coffee.

The cherries are then dried slowly on raised African beds before resting for several weeks. After milling and multiple rounds of sorting, the coffee is prepared for export.

Why we roast it

We selected this coffee because it offers something a little different while staying true to its origin. The Kickstart process enhances sweetness and texture rather than dominating the flavour, allowing the quality of the coffee and the character of Guji to remain the focus.

It is an innovative coffee that still tastes unmistakably Ethiopian.

This coffee is equally at home as filter or espresso. Filter brewing highlights the delicate fruit and floral notes, while espresso brings out the syrupy sweetness and fuller body.
